Pollo a la Pizza


  • 800gr. de pollo picado
  •  2 puerros picados y rehogados con rocio vegetal
  •  2 zanahorias hervidas y pisadas
  •  2 claras de huevo
  •  sal al gusto, orégano y pimienta


  •  ½ lata de tomates perita o 4 tomates perita pelados y picados
  •  200gr. de queso magro
  •  provenzal, orégano, sal al gusto
  •  rocio vegetal

Elaboración de pollo a la pizza

  •  Mezclar el pollo picado con el puerro, el puré de zanahorias, las claras, sal, orégano y
  •  Amasar hasta conseguir una mezcla homogénea.
  •  Lubricar un molde para pizza con rocío vegetal, acomodar la preparación anterior y
    disponer encima el tomate condimentado con provenzal, orégano y sal.
  •  Cocinar en horno moderado hasta que el pollo esté bien cocido.
  •  Retirar, cubrir con el queso previamente rallado y gratinar en el horno antes de servir.

  •  4 supremas de pollo medianas
  • Rocio vegetal

Para el relleno:

  •  1 taza tamaño te de migas de pan
  •  agua según necesidad
  •  60gr, de queso Port Salut light picado
  •  2 cdas. de queso rallado light
  •  20gr. de jamón cocido magro picado
  •  1 clara de huevo
  •  provenzal, orégano, sal al gusto

Para la salsa:

  •  1 vaso de vino blanco
  •  1 taza de caldo de pollo light
  •  1 cda. de mostaza
  •  2 cdita. de fécula de maíz
  •  ¼ kg. de uvas fresca para jugo
  •  sal y pimienta al gusto

Para el decorado

  • 1 clara batida a nieve
  •  1 cda. de azúcar
  •  24 uvas


  •  Humedecer las migas de pan con agua y mezclarla con el resto de los ingredientes para el
    Hacer un corte vertical en la parte superior de las supremas y rellenarlas con la mezcla
    hasta la mitad, cubrirlas con rocio vegetal y reservar
  •  en una cacerola caliente dorar las supremas y luego agregar el vino hasta que se evapore
  •  incorporar el caldo, la mostaza y un vaso de jugo de uvas
  •  condimentar con sal y pimienta y tapar hasta que las supremas estén cocidas
  •  pasar las uvas por las claras batidas y espolvorear con azúcar, luego cocinar en el horno
    hasta que se endurezca la cobertura
  •  espesar la salsa con la fécula disuelta en agua fría
  •  Servir las supremas con la salsa y decoradas con las uvas escarchadas

  • 4 figacitas árabes
  •  200gr. de supremas de pollo cocidas frías
  •  1 tomate grande cortado en 4 rodajas
  •  8 hojas de albahaca picadas
  •  4 cdtas. de mayonesa light
  •  2 cdas. de queso blanco descremado
  •  4 aceitunas verdes picadas


  • Mezclar la mayonesa con el queso blanco y las aceitunas
  •  abrir con cuidado las figacitas y untar la preparación de la mayonesa y el queso
  •  colocar el pollo en piezas finas y cubrir con las rodajas de tomate y las hojas de albahaca
